Surviving Dinner Time

Life as a working mom is a busy one. Teaching is my chosen profession and mom is my chosen career. Between those two responsibilities, there are days when I just run out of time. Add in being a wife and having a home to care for, I have to find ways to save time and get things done each day. I will admit that time in the kitchen is often where I cut corners. But that doesn’t mean I don’t get a good meal on the table!

Dinner is an essential part of our lives. We have to eat it every day and sitting down to eat with my family is extremely important to me. But after a day of taking care of my son and then teaching a class of my special education students, the last thing I want to do is slave away in the kitchen for hours. I want time with my family! How do I get it?

My confession is that I’m a semi-homemade mom. I love putting together great meals for my family but I rarely cook from scratch. My pantry and refrigerator are stocked with products like RO*TEL Tomatoes, frozen vegetables, and pasta. These help me whip up a great meal with less prep time. Of course, the key is to find easy recipes too. I’m intimidated by recipes with an ingredient list a mile long, so I count on sites like to help me find recipes I know I can handle!

My family has been craving Mexican food recently. It happens from time to time and I’ll admit that we often end up going out to eat. But with a toddler that is almost more stressful than anything, so it’s not always worth it these days. I have been trying to find recipes that are easy for me to make, will appeal to the cravings of my family, and will also entice my toddler to eat with us!

You know, just a typical challenge in the life of a mom.

So this week I had Mexican on mind and RO*TEL in my cabinet. I debated queso and nachos because my son loves to dip chips. But my husband requested tacos.

TACOS? With a toddler? That sounded like more mess than I wanted to think about. Taco meat, beans, and cheese falling all over my kitchen floor!

But then it hit me! There was a way to control the mess of shredded cheese.

Bake it all in the taco shell! And so Oven Baked Tacos were born in my kitchen. And I knew I would survive yet another meal time thanks to my semi-homemade ways!

Oven Baked Tacos

What you need:

  • 1 pound ground turkey (or ground meat)
  • 1 can RO*TEL Diced Tomatoes & Green Chiles
  • 1/2 can black beans
  • 1 package Taco Seasoning
  • 2 Tbs. water
  • 2 cups shredded cheese
  • 1 package taco shells
  • Additional condiments as desired: lettuce, tomatoes, onions, sour cream, guacamole, etc. 

What you do:

  1. Heat the oven to 400 degrees.
  2. Brown the ground turkey in a skillet over medium heat. Drain and return to pan.
  3. Add RO*TEL, black beans, taco seasoning, and 2 Tbs. water. Mix well and continue to cook over medium heat until excess liquid is cooked off.
  4. Place taco shells in a glass baking pan. Spoon taco meat generously into taco shells.
  5. Sprinkle cheese over the top and place in the oven.
  6. Bake for 10 minutes or until cheese has melted.
  7. Garnish with additional condiments as desired.
  8. Serve it up and watch them enjoy it!
